Come in to Prestons Restaurant + Lounge this festive season. Over the holidays there is nothing better than enjoying a nibble and nosh with your family, friends, and colleagues. Here at Prestons, we know it’s the holidays when Paddy’s delicious and comforting seasonal mulled wine is back on the menu.
This year, our gift to you is sharing our famous recipe so you can celebrate at home with your loved ones. It’s a super forgiving and easy recipe – just remember to watch it: the only rule is no boiling, as it will burn off the alcohol. Before your house guests arrive, be sure to make a pot; your home will smell like Santa’s elves have been working overtime.
Mulled Wine Recipe:
• 1 bottle Zinfandel
• 2 oz. honey
• 1/2 orange, zested
• 1/3 cup apple cider (optional)
• 10 cloves, whole
• 5 cardamom pods, cracked or opened
• 2 cinnamon sticks
• 1 star anise, whole
• ¾ oz. St-Rémy brandy
• 5 bay leaves, whole
• Pinch of nutmeg
• 1/6 knub of ginger, thinly sliced
Combine all ingredients (except brandy) in your favorite stockpot and bring to a simmer over medium high heat (remember to not boil mixture – you don’t want to boil the alcohol out!). Reduce heat to medium-low, and let simmer for at least 15 minutes or up to 3 hours. Add brandy and strain. Serve 5 oz. portions in a brandy glass and garnish with orange slices and cinnamon sticks, or your favourite seasonal garnish. The aroma in your home will be amazing! Bartender’s tip: to reduce the mess of straining, place orange zest, ginger, star anise, cinnamon stocks, cardomom pods in a cheesecloth; simply remove when ready to serve.
